Couscous Salad (High Protein & Healthy)

Ingredients:

  • 1 part instant couscous
  • 1 part boiling water
  • 1 part mixed beans (drained and rinsed)
  • 1/2 part cucumber (diced)
  • 1/2 part bell pepper (diced)
  • 1/2 part parsley (chopped)
  • Shallots or onion (finely chopped, to taste)
  • 2 tablespoons apple cider vinegar
  • Olive oil (to taste)
  • Salt (to taste)
  • Pepper (to taste)

Instructions:

  1. Prepare the Couscous:

    • Place the couscous in a large bowl.
    • Add an equal part of boiling water, cover, and let it sit for 5 minutes.
    • Fluff with a fork to separate the grains.
  2. Mix the Vegetables and Beans:

    • In a separate bowl, combine the mixed beans, cucumber, bell pepper, parsley, and shallots or onion.
  3. Combine and Season:

    • Add the vegetable mixture to the couscous and mix gently.
    • Drizzle with olive oil and apple cider vinegar.
    • Season with salt and pepper to taste.
  4. Serve:

    • Toss everything together until well combined.
    • Serve immediately or refrigerate for an hour to enhance the flavors.
